Grilled Cheese

Every since I had a bite of Milk Truck’s Classic with a Twist (available at Brooklyn Flea), I’ve been dying to make a grilled cheese sandwich. But, I never have bread! I’m currently facing a serious cheese overstock problem, so I made it a point to pick up a loaf of bread.

My grilled cheese is inspired by the Classic with a Twist, but it’s way closer to this grilled Gruyère with red onions.

My ingredients:

thick slices of country sourdough (from Amy’s Bread)

cave-aged Gruyère cheese, grated

red onion, sliced thinly and caramelized

whole grain mustard

grapeseed oil
