A Decadent Mac ‘n Cheese

As Michael Pollan says, “Eat all the junk food you want as long as you cook it yourself.” You are on, Michael Pollan. I recently purchased these adorable ramekins on sale, and I wanted to put them to use. If you’re going to eat mac ‘n cheese, you might as well go all out and eat TRUFFLED mac ‘n cheese. Sarah recommended eating s/f’s truffled three-cheese version, and I decided to try it out. I loved the mussels and chorizo recipe from eating/sf, so I could only imagine how good the mac would be.

With cheddar, brie, gruyère, and truffle oil, can you go wrong? No, you cannot. This mac ‘n cheese was worth all the steps, and the individual ramekins helped me exercise portion control. In an effort to clean out my cupboard, I used store-bought breadcrumbs (toasting in butter helps) and farfalle pasta.
