Happy Pi Day with Mascarpone Cheesecake
Happy Pi Day! That’s March 14th, for you non-mathletes. One should always celebrate Pi Day with a pie. Cheesecake is technically a pie, and I’ve used this recipe before (The results were delicious). This mascarpone cheesecake recipe is from Epicurious. I cheated and used a pre-made Nilla Wafer crust. Semi-homemade?

2.5 packs (20 oz) of cream cheese, 8 oz of mascarpone, and sugar. I decided to use the entire container, which was actually 8.75 oz.

With eggs, lemon juice, vanilla, and salt.

Uh oh… it looks like the filling is trying to defy gravity.

OVERFLOW! I scooped up the extra filling into a ramekin.

Does this decadent cheesecake need a topping? Of course. Sour cream, lemon juice, vanilla, salt, and sugar.
